七绝-五花肉

白肥红瘦渭泾匀, 几抹朝霞挂早晨。
烧烤扣焖煎腊烩, 爽脆香浓最引人。

扣—梅菜扣肉和芋头扣肉必用五花肉
腊肉—用五花肉

谢谢庆宏兄和作,名厨不敢当,食客可当仁不让,今天又买了几只龙虾下酒,现在是龙虾的最肥美季节,去了一趟王子岛, 真正学会了煮吃龙虾的最高境界。

白云兄,您的是什么地方的龙虾?有多重?煮以前先放龙虾尿然后把龙虾的鳃去掉, 一般一磅煮一分钟,二磅煮二分钟, 老外煮的是十分钟煮成了橡皮还觉得好吃,可见价值观和口味都会不同,不可强求。Laughing

龙虾本来还可以生吃,用日本芥末是另一境界了。 我是不用配料的,龙虾已经有味道了,我喜欢原汁原味,我以为是最高境界了,各人喜欢就是了。

謝秋叶傳授的最高境界秘诀!
我的烹调方法,是將蝦頭与蝦肉分别款式: 蝦頭用來炆,加一点点燒腩,并以姜葱帶味,真是色香味俱全,一流! 蝦肉切片,用以白灼,又是另一番清新爽脆!
