菜名
贰菘马蹄炒玉簪虾球
主料
大中虾、瑶柱、松子、马蹄、菜心、干葱茸
蒜茸腌料:盐、鸡粉及生粉各少许
做法
1、虾剥壳、剔肠处理干净,抹干水分,切双飞,加腌料略腌。
2、在虾背部切一小刀,用菜芯穿过,再用热水拖至熟,吸干水分,备用。
3、松子用油炸至金黄。待用。
4、瑶柱先浸水至软,捞起,沥干油份,待用。
5、烧熟油,爆香干葱茸、蒜茸,加入马蹄片炒透,将虾球菜心加镬兜炒,再加入调味料及松子炒匀,盛上碟,洒上金黄粒丝即成。
