原 料:
茼蒿嫩茎叶250克,豆制百叶250克,蒜泥10克,醋5克,精盐3克,酱油5克,麻酱10克,麻油50克。
制法:
(1)将茼蒿择洗干净,放旺火沸水锅内略烫至熟,捞出,用清水洗一遍,沥干,切成3厘米长的段。百叶切成5厘米长的细丝,放入盆中用开水烫两次,沥干水分。
(2)将茼蒿段、百叶丝同放入盘内,加入麻酱、精盐、味精、酱油、醋、麻油、蒜泥,调拌均匀即成。
特点:
色泽青白,脆嫩柔软,酱香浓郁。
