鲴鱼600克,酱油30克,油70克,白糖20克,料酒15克,葱3根,姜10克,生粉适量。
制作:
1.将鲴鱼斩成1.8厘米左右的块,锅置火上烧热。
2.加油70克,下葱米煸出香气,滑入鱼块转动锅子,略煎一会烹入料酒,加酱油、白糖、味精、水,烧开后加盖用小火慢焖35分钟左右。
3.开大火收汁,淋入湿生粉勾芡,不断地转动锅子大翻,淋入香醋,出锅将鱼滑入盆中即可。
特点:色泽淡红,香、鲜、糯、肥。
