菜 名:
珊瑚龙虾球
主 料: 龙虾、芦笋、蛋白(搅匀)、姜、蒜茸、干葱茸、蟹皇(蟹羔)、上汤、甘笋花数片。
做 法: 1、芦笋刨去外皮,斜切段,用上汤灼热,捞起,待用。
2、龙虾放尿洗净,起肉切片,加入蛋白捞匀,用滚油泡油,捞起,沥干油份,待用。
3、蟹普用热水淋数次至熟,待用;龙虾头合熟,放上碟。
4、烧熟适量油爆香蒜茸、干葱茸,放入高味料、芦笋、甘笋花炒匀,再将龙虾回镬,用生粉水埋芡汁,最后加入蟹羔,炒数下,即可盛起,放入龙虾身位置,可用青瓜花围边上碟。
