广州麻辣虾
是以鸡尾虾为原料,假如在武汉的话应该是以红色的河虾为原料吧。
原料主要是原料新鲜、肉质鲜嫩。
做法店家的做法是将虾背用刀划开,用热油滚熟,再将配菜置于锅底,将麻辣底料淋上微煮即端上;所以刚开始吃时虾肉外酥里嫩,干脆甜嫩,吃到一半时、底料慢慢浸入食材,用嘴将汁吸干,又辣又香;配菜在热油的包裹下慢慢闷熟,恰到好处.
