  【來源】為牛、馬、羊、駱駝等之乳汁煉製而成的食品。
  【製法】《飲膳正要》:"造法用乳半杓,鍋內炒過,入餘乳熬數十沸,常以杓縱橫攪之,乃傾出,罐盛待冷,掠取浮皮,以為酥,入舊少許,紙封放之,即成矣。又幹法,以曬結,掠去浮皮再曬,至皮盡,卻入釜中,炒少時,器盛,曝令可作塊,收用。"
  【性味】甘酸,平。
  ①《千金·食治》:"味甘酸,微寒,無毒。"
  ②《綱目》:"水牛、馬、駝之冷;螓牛、羊乳溫。"
  ③《本經逢原》:"甘,平,無毒。"
  【功用主治】補肺,潤腸,養陰,止渴。治虛熱,煩渴,腸燥便艱,肌膚枯澀,斑疹瘙癢。
