  法,起源于炎黄时期。随着陶器兴起,祖先就发明了衍和甑,说明在四、五千年前,人们就已懂得用汽作为导热媒介制食物的科学道理,所以就有黄帝“谷为饭”之说,《齐民要术》里,记载鸡,羊,鱼等方法,宋朝以后相继出现了,裹法,酒法,瓤法,明清以后有粉法。
  菜特点:
  1、将原料以汽为传热介质加热制熟,不同于其它技法以油,水,火为热传介质。
  2、菜原料内外的汁液不像其它加热方式那样大量挥发,鲜味物质保留在菜肴中营养成份不受破坏,香气不流失,
  3、不需要翻动即可加热成菜,充分保持了菜肴的形状完整,
  4、加热过程中水分充足,湿度达到饱和,成熟后的原料质地细嫩,口感软滑,类菜肴的先料,用料广泛,多先用质地老韧的动物性,原料以及质地细嫩柔或精细加工后的蓉泥原料,涨发后的干货原料,如:鸡,鸭,牛肉,海参,鲍鱼,鱼,虾,蟹,豆腐和各种鱼虾原料蓉泥等。原料的形状多似整只,厚片,大块,粗条为主。
  在菜的火候:不同的原料制作率时,火力的强弱及时间长短都要有所区别,
  ①旺火沸水速,质地嫩的原料18—15分钟如清武昌鱼。
  ②旺火沸水速。原料形体大,质地老,成菜要求酥烂(2—3小时)如:荷叶粉肉。
  ③中小火沸水缓,原料质地较嫩,或经过较细致的加工,要求保持鲜嫩或塑就形态的如:芙蓉蛋膏,绣球鸽蛋等。
  制菜肴注意事项:很多酒店都是用车或箱,经常是几种菜肴一起加热,操作时应注意:
  ①汤水少的菜肴放在上面,汤水多的应放在下面,这样拿取比较方便,不易造成烫伤事故,
  ②色浅的菜肴应放在上面,深色的放在下面,这样放置的目的是上面菜肴的汤汁溢出时,不至于影响下面菜肴的颜色,
  ③不易熟的菜肴应放在上面易熟的放在下面。因为热气向上,上层气的热量高于下层,
  ④一定要在锅内水沸后再将原料入锅。⑤上火加温的时间一般比规定时间少2—3分钟,停火后不马上出锅,利用余温虚一会。
  气的的压力划分:放气,原气,高压气,放气的温度在90℃左右,“放气”就是制的时候虽然加盖但不能盖严,留有一条缝隙,当笼屉内气量过足过猛时,部分气就会从缝隙中逸出散发,锅内气压与外界相近,减少了对菜品的冲击,避免破坏菜形。
  放气的目的:
  1、让原料受热发生变化,由生变熟,熟的程度大都为断生,刚熟菜肴以鲜嫩为主,
  2、保护美观的菜形,无论加盖留缝或气足揭盖,都是围绕这一目的所采取的技术措施。原气的温度在100—103℃,高压气的温度在120℃是将原料放入密闭容器中,利用高压气迅速将热量传递,使原料快速成熟加工方法。
  类菜肴按技法分:清,粉,扣,包,糟,花色,果盅
  1清:是指单一原料单一口味(咸鲜味)原料直接调味制,成品汤清味鲜质地嫩的方法,原料必须清洗干净,沥净血水。
  工艺流程:选料→切配→腌渍预制→制→出锅。
  代表菜:清武昌鱼、清鲥鱼
  2粉,是指加工,腌味的原料上浆后,粘上一层熟玉粉制成菜的方法,粉的菜肴具有糯软香浓,味醇适口的特点。工艺流程:选料→切配→腌渍→拌生粉→制→装盘。
  代表菜:荷叶粉肉,、粉鳝鱼
  3包:是将用不同的调料腌制入味烹调原料,用网油叶,荷叶,竹叶,芭蕉叶等包裹后,放入器皿中,用汽加热至熟的方法,此法保持原料的原汁原味不受损失,又可增加包裹材料的风味
  4、糟:是在菜的调料中加糟卤或糟油使成品菜有特殊的糟香味的法。糟菜肴的加热时间都不长否则糟卤就会发酸。
  5、上浆:是鲜嫩原料用蛋清淀粉上浆后再的方法。上浆可使原料汁液少受损失,同时增加滑嫩感。
  6、果盅:是将水果加成盅,将原料初加工,放入果盅内,上笼熟的方法,果盅选择多以西瓜、橙子、雪梨、木瓜、桔瓜为主,去掉原料果心。
  7、扣:就是将原料经过改刀处理按一定顺序复入碗中,上笼熟的方法,熟菜肴翻扣装盘形体饱满,神形生动。
  8、花色:又称为酿,是将加工成型的原料装入容器内,入屉上笼用中小火较短时间加热(根据不同性质的原料作相应调整)成熟后浇淋芡汁成菜的技法。这种技法是利用中小火势和柔缓气加热使菜肴不走样、不变形,保持析来美观的造型,是法中最精细的一种。
