特点: 酸甜可口,香醇焦脆。
原料:活鲫鱼500克,山西陈醋、白糖、生抽、精盐、味精、植物油、葱末、姜末、香菜末各适量。
制作方法:
(1)鲫鱼宰杀后从中间片开去净内脏及腮,洗净。
(2)锅内加油烧至八成热,放入鲫鱼,炸熟捞出。
(3)锅中加油烧热,葱姜爆锅,放入炸好的鲫鱼,炒匀即可。
操作方法:鱼鳞不去,炸时油温要高,并炸焦熟,炒时动作要轻,以免破碎。
