材料: 黄牛腱肉(指黄牛的小腿肉)1000克。

做法: ①把牛肉切成小块放入清水中,用高火煮沸,取出洗净。
②在牛肉块中加入绍酒、葱结、姜、桂皮、花椒、酱油、冰糖、丁香、五香粉及清水适量,高火5分钟后改中火40分钟,见汤汁已稠取出,待凉后切片装盘,把汁淋在牛肉片上即可。
