【原料】
金华熟火腿中峰一块750克。 酒酿250克,白糖50克、绍酒75克、湿淀粉25克。
【制作过程】
将熟火腿去皮并修净油头,切成薄片。取10片火腿;逐片卷入酒酿使其呈喇叭形,置小盘中。将火腿片整齐排在碗内,加白糖、绍酒,并以酒酿垫底,用保鲜纸封口,与火腿卷同时上笼蒸20分钟。将蒸好的火腿片反扣在盘中,原汁入锅烧热勾芡,用火腿卷围边,浇上原汁即成。
