Guizhou chicken
■原料:嫩公鸡一只、盐、酱油、色拉油、红油、辣椒酱、葱节、姜片、蒜泥、味精等适量。
■制法:将公鸡去内脏后洗净,砍成4厘米大小的块状。
炒锅内放油烧至5成熟时下入鸡块,爆一下起锅。锅内留少量油下姜片葱节炒香,把鸡块、蒜泥、盐、酱油、辣椒酱下入,加适量水将鸡块烧熟。
起锅时放入味精、红油即可。
■特点:香辣红亮,松软离骨,佐饭、佐酒均宜。
■提示:烧鸡时,水不宜太多,不能用大火。
