[原料/调料]
选用150克左右的小青龙虾、河虾仁80克,生粉70克,柠檬1只,蛋1只,盐、味精适量。
[制作流程]
1.小青龙虾斩去头尾,中段取肉.水中加盐、味精、两片柠檬烧开,投入中段肉及头尾煮熟。
2.将虾仁用粉碎机打成茸,加盐、味精、鸡蛋清1只,生粉少许,放入裱花袋内;另用锅放入水,挤裱花袋成虾线养熟备用。
3.用盛器摆放头尾,中间放入打成片的龙虾肉上面整齐摆放虾线即可。
特点:造型别致,口感鲜嫩。
