原料:草鱼、肥膘肉、鸡蛋清、生粉、水、盐、味精、生姜、瘦肉丸子
做法:1.草鱼宰杀洗净后取净鱼肉剁成茸,加入少量肥肉丁,用水、生粉、味精、盐、鸡蛋清、姜末搅拌成鱼胶,上笼屉蒸25分钟即成鱼糕,在蒸熟的鱼糕上面抹上鸡蛋黄再蒸一分钟即可。
2.将瘦肉制丸并炸至焦黄,入笼与鱼糕同蒸。
特点:鱼糕为湖北民间四季待客的上品,入口鲜香嫩滑,老少皆宜,此菜有百余年的历史。
