主料
老鸡1只、排骨640克、五花腩640克、火腿皮100克、鲍翅960克
辅料
芫荽、火腿丝各适量;姜、葱各适量
调料/腌料
上汤、姜、葱、盐、绍酒、油、浙醋适量
制作过程
(1) 将老鸡削好洗净,鲍翅用油爆过,放入炖窝中,并把鸡、排骨、五花腩、火腿皮等放在鲍翅面,加入上汤、姜、葱、盐、绍酒、油,隔水炖六小时。
(2) 取出所有炖料,只捞起鲍翅连原汁上桌,食时佐以芫荽、火腿丝、浙醋。
