菜名:
笋耳扒对虾
主料: 对虾500克、黑木耳
配料: 精盐、味精、料酒、胡椒粉、面粉、鸡蛋液、姜末、葱花、蒜泥、酱油、白糖、香醋
做法:
1.将500克对虾洗净,去掉头、壳、留尾,从脊背剖开相连成片,撒上精盐、料酒、胡椒粉、面粉拌匀,拖上鸡蛋液,用七成热的油锅浸炸至金黄色,捞出摆入盘内。
2.原锅留底油约50克,放入姜末、葱花、蒜泥煸出香味,再加入冬笋片、水发黑木耳(各50克)、酱油、白糖、味精、香醋,沸后用水淀粉打薄芡,淋入花椒油炒匀,扒在对虾上即成。
