菜 名:
竹笋鸡片雪耳蛋花汤
主 料: 竹笋38克、雪耳20克、鸡胸肉300克、鸡蛋2只(打匀)、菜心300克、上汤1/2杯
配 料: 盐1/3茶匙、酒1/2茶匙、胡椒粉少许
做 法: 1、竹笋、雪耳用清水浸发,竹笋切去头尾,雪耳剪蒂,撕碎,同飞水过冷河,捞起沥干水分。2、鸡胸肉洗净抹干,切片,加腌料腌片刻,待用。3、菜心洗净,切约2寸长段。4、煮滚上汤放入上列材料煮至熟,捞起,排放上碟,将锅内上汤用生粉水埋芡,淋上材料面即成。
