Bamboo shoot [sprout] saute rice field eel,mud eel
主料:大鳝鱼
辅料:熟春笋、蒜瓣
调料:酱油、白糖、红醋、盐、料酒、鸡精、胡椒粉、食用油、清汤、淀粉
做法:
1、 将鳝鱼去头尾,切成长段,用剪刀去除骨头后洗净;
2、 春笋洗净切成长条放入鳝段腹内,用沸水焯一下;
3、 坐锅点火,待油热后将蒜瓣倒入锅中炸香,放入清汤、酱油、白糖、盐和鳝鱼段,开锅后加盖用小火炖,待汤汁稠时转中小火加入红醋、鸡精、胡椒粉勾少许芡,即可出锅。
特点:鲜香酥烂、味醇汁浓
