菜 名:
生滚鲤鱼
主 料: 鲤鱼公约1000克,排骨125克,湿冬菇40克,虾米10克,酸梅4粒,白醋30克,味精7.5克,蒜泥醋2碟,汤2000克,葱白15克。
做 法: 1、排骨斩成小块,咸酸梅撕破,用瓦罐盛起,加入汤、虾米、冬菇,先滚10分钟。
2、鲤鱼削洗干净,原条放进罐里,再滚10分钟,就够火候。然后,加入白醋、味精、葱白段即成。跟二碟蒜泥醋佐食。
特 点: 汤香浓,味鲜美,鱼肉滑,酸梅可和味。
