材料
1.主要材料:广东省石岐杂交良种鸡1/2只(每只约重1300克~1400克)。
2.腌鸡味料:劳斯玛丽、西子、百里香、香叶、黑椒粒、咖啡粉、红酒、白糖、甘笋和香茜等。
3.调味料:玛哩汁、法芥、洋葱、西芹。
做法
1.先用腌鸡味料把鸡肉腌制约8个小时。
2.把鸡用烟熏45分钟。火候要控制好,要求鸡肉熟,同时鸡的汁液要保留。鸡肉表皮要有淡淡的咖啡色和香浓的烟熏与咖啡味。
用玛哩汁做底,加上上述调味料调制成烟熏汁。
