菜 名:
桂竹笋珊瑚翠绿蔬
主 料: 桂竹笋160克、豆苗320克、蟹肉80克、蟹黄24克
配 料: 盐、太白粉、糖、蛋白、上汤
做 法: 1、将桂竹笋切条片状,烫熟后冲冷水15分钟沥干,加入上汤、盐、糖泡约1分钟使其入味再炒熟。2、将蟹肉烫熟后起锅,加入上汤、盐、糖、白胡椒,用中火烧滚后熄火,加入蟹黄及蛋白,以适量的太白粉徐徐调勾芡。3、将豆苗炒熟围在主菜的边缘即可
