主料
鸡翼1斤(约600克),干葱头3粒,姜2片,清水3/4杯。
配料
调味料:柱侯酱3汤匙,陈皮1/4个,八角、草果各少许,冰糖少许。
做法
1、鸡翼洗净,烧滚一锅水,放下鸡翼,然后熄火浸约5分钟,取出滤水片刻,沥干备用。
2、起油镬,爆香干葱头和姜片,下调味料和鸡翼爆炒片刻,洒入酒,加入清水,用文火炆约10分钟,熄火浸片刻。
3、把鸡翼排放在碟上,吃时浅上汁液便成。
备注
心得:如果鸡翼有过多油脂,可先放在水喉下冲致意油脂才汆水,这样做出来的鸡翼会较清爽。
