有机物质即有机化合物。分子较大含碳化合物（一氧化碳、二氧化碳、碳酸盐、金属碳化物等少数简单含碳化合物除外）或碳氢化合物及其衍生物的总称。有机物质是生命产生的物质基础。
多数有机化合物主要含有碳、氢两种元素，此外也常含有氧、氮、硫、卤素、磷等。部分有机物来自植物界，但绝大多数是以石油、天然气、煤等作为原料，通过人工合成的方法制得。 |
