原材料:上海青250克,白魔芋丝一包,生姜10克。调味料:花生油10克,盐5克,味精5克,白糖1克,麻油少许。
制法: (1)上海青去老叶,改成菜胆,白魔芋丝冲洗干净,生姜去皮切丝。
(2)上海青用开水加少许盐,味精,烫熟摆入碟内待用。
(3)烧锅下油,放入姜丝煸香锅,注入清汤烧开,加入魔芋丝,调入盐,味精,白糖,麻油煮透,倒入上海青中间即成。
特点: 小贴士:调味要清淡,汤汁要适中。菜胆不能烫得太熟,要爽脆。
