(1)盐 1/2大匙
(2)白醋 1/2杯
糖 1/4杯
制作:
(1)将嫩姜芽洗净去除外膜并沥乾,将调味料(1)均匀撒在嫩姜芽上,并以手轻轻按压搓揉使其软化,约10分钟後静置3~4小时。
(2)将黄金针鱼切成1公分段备用。
(3)将嫩姜芽的盐水沥乾并用冷开水洗净,再次彻底沥乾水份,加入调味料(2)及黄金针鱼,冷藏腌渍约3~4小时待其入味後即可食用,冷藏约可保存1遧。
