主料:肉滑
辅料:藕、莴笋、茭白、马蹄、彩椒、姜、蒜
调料:盐、鸡精、白糖
烹制方法:
1、将肉末中加入香菇末,或者墨鱼末中加入香菜末搅拌均匀,制成馅,做成不同的形状蒸熟或者入水汆熟即成肉滑;
2、坐锅点火倒油,下藕片,加盐、鸡精翻炒几下出锅,码放在盘中,将肉滑过油炸一下取出,再放入茭白炸一下取出,锅中加水,放入盐、鸡精,待水开后放入莴笋、马蹄、茭白、肉滑焯一下取出;
3、坐锅点火倒油,下姜、蒜、彩椒爆香,放入肉滑、茭白、莴笋、马蹄翻炒均匀,出锅装盘即可。
特点:爽滑可口,脆嫩鲜香。
