腌萝卜就是将腌过的萝卜放入水中洗掉盐分、阴干,加上米曲、砂糖、调味料的腌制食品。泽庵咸菜原来是将风干的萝卜,放在加入盐的糠中腌制的东西。但是,从大正的后半期至昭和初期,为了解决销售量增加的问题,用盐去除水分来代替风干,并且逐渐被叫做东京泽庵。
