母亲腌制的萝卜干/孙培用

我记事的时候,家里生活比较困难。一家八口人都靠父亲微薄的工资维持生活。一入冬,再想吃时令鲜菜已不大可能,再说也没钱买。因此,腌咸菜就成了饭桌上整个冬季和春季的常吃菜。咸菜吃多了,胃里的油水就少,能吃顿青菜,特别是有鱼、有肉打打牙祭,就感到特别满足,特别幸福。
母亲是个心灵手巧的人,她不仅承包了家里和田里的劳动,还把困难的生活打理得井井有条。每年夏季她都要开辟一块地方,细心播种,精心侍弄浇灌,直到破土长出绿叶。把萝卜长得叶子“萝卜菜”吃得差不多,萝卜也成熟了。这时节,已到了十月份,收获萝卜就像一场战役,神圣而兴奋,母亲知道,这些萝卜,跟以后一段日子的生活有关。
母亲开始腌制萝卜干的各道工序。先把萝卜洗干净,切成长条。均匀地放在盖帘上到阳光强的地方晾晒。大概一周时间,阳光把萝卜条内的水份晒去七八成后,把萝卜条放入口小肚大的坛子中用盐拌和,然后再放入用擀面杖尴成粉末的花椒、大料、熟芝麻,把擀好的粉末揉进萝卜条内,第二天要进行“倒缸”,就是把萝卜条底上下翻一遍,有利于萝卜条吸收盐份和佐料。最后,把萝卜条分层压实,每压一层再放撒一些酒、放一些酱油,用塑料布把坛子口用绳子封实。这样再经过二十几天就可以取出食用了。
母亲腌制的萝卜干是我们家贫困生活年代的调味品和副食品。别人家做的腌咸菜,放不了几天就变质,吃起来还有些怪味,或者很咸,母亲做的萝卜干易存,吃起来口感好、香、脆,还很筋道。
每每看着母亲一刀接一刀细心地切着萝卜,一条一条地摆放萝卜,总觉得我吃进嘴里的萝卜干不只是香甜,还有一份浓浓的母爱掺在里面。那时候,总幻想有一天,一定要把天下所有的美食都做一道,让母亲放下手中的萝卜干,吃个够,以报答母亲的爱。我知道,那时候的母亲一定高兴得合不拢嘴。
其实天下没有哪个母亲需要自己儿女的回报的。生活好了一点,可母亲还是一如既往每年入冬之前腌制萝卜干。而如今,母亲已不在了,再没有人为我和家人腌制那种味道的萝卜干了。我对腌制萝卜干有了日甚一日的想念。我很后悔,那时侯年龄小,不知道帮母亲干一些活,而且没跟母亲学到腌制萝卜干的手艺。我也学着母亲的手法腌制过萝卜干,可却没有那种味道,其实母亲的心里永远装着自己的儿女们。现在再吃萝卜干,我怎么也找不到母亲腌制萝卜干的味道了。所以呦,年轻的朋友,如果母亲再为你腌制萝卜干,你一定要多吃几口。
