  【原创】想起豆腐渣

  当年,物质匮乏,咱乡下老百姓的菜篮子也得不到解决,好多人家不得不买点儿豆腐渣做成菜佐餐。豆腐渣价格便宜,当年五分钱就可以买一碗。花上一角钱,会给很多,够一家人吃的。豆腐渣既当菜,又能当饭,填肚子的效果很不错的。瓜果茄子吃多少肚子都觉得空,而吃豆腐渣却有吃饭一样的饱胀的感觉。
  豆腐渣买回去后,其实好多人家也舍不得做什么精细加工,就是放到咸菜盆中加点油盐煮饭时炖一炖,饭熟了豆腐渣也熟了。稍微讲究的人家,喜欢放到锅里炒熟。菜锅里放上油,加生姜米、葱花煸出味来,放进豆腐渣慢慢炒,在炒的过程中点些盐水,直炒到豆腐渣呈金黄色,蓬松如锯末,撒上蒜花就可出锅。如果是初夏,家里有鸡毛菜,把鸡毛菜洗净切碎,跟豆腐渣一块炒,色、香、味都不错。其时,豆腐渣清香扑鼻,单吃也是很好的。只是有一个缺点,划拉一口到嘴中,立时满嘴里都是。假如这时候说话,很容易呛到气管里。有一次,就这么着,我呛着了,直咳得脸红脖子粗,眼冒金星。喝了几口稀粥,才好受得多。我们家是做豆腐的,大鱼大肉没有,豆腐渣有的是,妈妈常常炒给我们吃。我们总是一碗一碗的吃。好在豆腐渣易消化,吃得再多也不会造成消化不良。
  邻居王奶奶有一次用豆腐渣做成饼子,很香。王奶奶把豆腐渣和面粉掺合到一块,加盐花、葱花调匀,做成直径三公分左右的圆饼放到筛子里。把锅烧热,把豆腐渣饼一块一块地贴上去,等到靠锅的一面焦黄,再翻过来把另一面贴上去。待饼子熟了,加点油到锅中,烧开,把豆渣饼放到里面翻炒片刻即可。这样的饼子吃起来,风味独特。外层像油饼,又香又脆,内层就像面包,松软,有一股浓浓的豆香。
  吃了王奶奶给的豆渣饼,我们回家也让妈妈做,不知是不是因为隔锅饭香的缘故,总觉得不如王奶奶做的好吃。
  掐指算来,我已经有三十多年没有吃过豆腐渣了。
