家乡建阳水吉有一种很常见,也很受人欢迎的小吃——扁肉。


水吉扁肉好,皮很关键。选上好的面粉,加上水和适量的碱,调匀揉成团后放案板上。一根长长的毛竹竿,一头伸进墙壁上的一个圆洞里,一头长出案板尺许,让人坐下去。坐面的人双手握住那竹竿,一下一下地坐下去,让竹竿重重地压在面团上,发出咿呜的欢乐声。直坐到面皮表面微微发亮,变成一块长方形的厚厚面板。这时,取下竹竿,换上一截长二尺许,中间粗,两头抓手处略小的滚圆木,用手在面块上来回地推,把面块推长,直到把那叠面推得薄如蝉翼。再用面刀切成六七厘米的正方形,叠在一起备用。这就是叫“坐皮子”。


扁肉肉馅也有讲究,需取猪后腿瘦肉,肉不水洗,不沾铁器。在小心地去筋除膜后,置木墩上用木槌拼命地敲打。直打到肉糊成一团,看去绵柔酥嫩,油光光的,装在大碗里,加适量的小苏打水、盐、味精,用筷子搅匀。


再把这馅置于一青花瓷盘中,用一根拇指宽的薄篾片刮取肉馅,粘上一张皮子,包成蝴蝶状或元宝形。煮时,将扁肉轻轻地撒入开水锅中,随着水的欢腾,一个个像水母一样的扁肉在水中上上下下地漂浮,移动、翻滚。俏丽成一朵朵妩媚的莲,濯濯摇曳,温婉秀美……


煮好用漏勺捞起,放在碗里,加入高汤。高汤是用猪大骨或猪头骨文火熬成的,味香而浓。再撒上葱花、姜米、红酒。视口味,调入适当的酱油、辣椒、酸醋等。一份水吉扁肉就正式出锅上桌了。舀一个放入口中,皮儿滑滑的,入口即化,咬下去的肉馅,嫩、脆,弹性十足。


在建阳,有人喜欢把面条和着扁肉加在一起吃,戏称为情侣餐,也有把光饼撕碎放入扁肉中吃的,人们说这叫着工作餐。这就是我家乡的水吉扁肉,只要你尝过,就会成为心中不休的牵挂。
