说孔子是美食家,是吹捧;若说孔子是吃货,则名副其实,我一万个赞成。
孔子是吃货,又不是一般的吃货。一般的吃货,只管吃,吃的胆子贼大,但凡味好,务求吃得尽情尽兴,用大块朵颐来形容,是再合适不过的。
孔子于吃讲原则,且原则得有些苛刻,有些不近人情。这终于让我对孔子不得不另眼相看了。
一般的吃货,是没有什么穷讲究的。他们对食物的来源一概不问,所切的形状一概不问,烹饪的方法一概不问,添加的佐料一概不问,只求一个味美。而孔子有许多附加条件,精细是他吃的首要前提,这一点明朝张岱在他的《圭饕集序》中有详细记载,你不妨找来一读。
还有更严格、更繁琐的标准,曰“八不食”。翻译过来,大意是:陈旧变味的不吃,颜色不佳的不吃,气味不好的不吃,烹调不当的不吃,不新鲜不合时令的不吃,调料放的不当的不吃,市场买来掺假的不吃,看着不卫生的不吃。照此标准,来要求今天的吃货们,恐怕就吃无可吃了。
孔子是高标准的吃货,或者说是高修养的吃货。他将吃与做人的原则修养结合在一起,这是一般吃货达不到的境界,甚至连美食家也相形见绌,常人就只能望其项背了。
也有例外,《吕氏春秋》曾记载:“文王食菖蒲菹,孔子闻之,缩项而食之,三年,然后胜之。”何故如此?纵然菖蒲菹能养生,能益寿延年,能增强某种功能,吃如此苦头,一般吃货会闻而色变,啖而止筷;美食家也会没有食欲,弃而远之。
“唯酒无量,不及乱。”这样的吃货不好找,放眼当下大大小小的宴席,但凡饮者,醺醺然,举目皆是;若不酩酊,已很难得了。
“食不语”,更难觅。在我所见到的吃货中,不讲究吃相,啧啧作声者有之;管不住心,曲意恭维者有之;管不住嘴,喧宾夺主、哗众取宠者有之。哪能像孔子,做文质彬彬的吃货呢。
孔子享年73岁,这在当时人平均寿命只有三四十岁的春秋,算是高寿又高寿了。所以,我奉劝今天的吃货们,不要暴殄天珍,不要暴食暴饮,而要向孔子学习,努力做到食有度,吃有格。如此,吃货也不再是一般意义上的吃货,而是有规格、上档次、讲原则的吃客了。
