  是烹飪方法的一種,指把經過調味後的食品原料放在器皿中,再置入籠利用汽使其成熟的過程。根據食品原料的不同,可分為猛火,中火和慢火三種。例如“鮮魚”、“水蛋”等。

  法,起源於炎黃時期。隨着陶器興起,祖先就發明了衍和甑,說明在四、五千年前,人們就已懂得用汽作為導熱媒介製食物的科學道理,所以就有黃帝“𠔌為飯”之說,《齊民要術》裏,記載雞,羊,魚等方法,宋朝以後相繼出現了,裹法,酒法,瓤法,明清以後有粉法。
  菜特點:
  1、將原料以汽為傳熱介質加熱製熟,不同於其它技法以油,水,火為熱傳介質。
  2、菜原料內外的汁液不像其它加熱方式那樣大量揮發,鮮味物質保留在菜餚中營養成份不受破壞,香氣不流失,
  3、不需要翻動即可加熱成菜,充分保持了菜餚的形狀完整,
  4、加熱過程中水分充足,濕度達到飽和,成熟後的原料質地細嫩,口感軟滑,類菜餚的先料,用料廣泛,多先用質地老韌的動物性,原料以及質地細嫩柔或精細加工後的蓉泥原料,漲發後的幹貨原料,如:雞,鴨,牛肉,海參,鮑魚,魚,蝦,蟹,豆腐和各種魚蝦原料蓉泥等。原料的形狀多似整衹,厚片,大塊,粗條為主。
  在菜的火候:不同的原料製作率時,火力的強弱及時間長短都要有所區別,
  ①旺火沸水速,質地嫩的原料18—15分鐘如清武昌魚。
  ②旺火沸水速。原料形體大,質地老,成菜要求酥爛(2—3小時)如:荷葉粉肉。
  ③中小火沸水緩,原料質地較嫩,或經過較細緻的加工,要求保持鮮嫩或塑就形態的如:芙蓉蛋膏,綉球鴿蛋等。
  製菜餚註意事項:很多酒店都是用車或箱,經常是幾種菜餚一起加熱,操作時應註意:
  ①湯水少的菜餚放在上面,湯水多的應放在下面,這樣拿取比較方便,不易造成燙傷事故,
  ②色淺的菜餚應放在上面,深色的放在下面,這樣放置的目的是上面菜餚的湯汁溢出時,不至於影響下面菜餚的顔色,
  ③不易熟的菜餚應放在上面易熟的放在下面。因為熱氣嚮上,上層氣的熱量高於下層,
  ④一定要在鍋內水沸後再將原料入鍋。⑤上火加溫的時間一般比規定時間少2—3分鐘,停火後不馬上出鍋,利用餘溫虛一會。
  氣的的壓力劃分:放氣,原氣,高壓氣,放氣的溫度在90℃左右,“放氣”就是製的時候雖然加蓋但不能蓋嚴,留有一條縫隙,當籠屜內氣量過足過猛時,部分氣就會從縫隙中逸出散發,鍋內氣壓與外界相近,減少了對菜品的衝擊,避免破壞菜形。
  放氣的目的:
  1、讓原料受熱發生變化,由生變熟,熟的程度大都為斷生,剛熟菜餚以鮮嫩為主,
  2、保護美觀的菜形,無論加蓋留縫或氣足揭蓋,都是圍繞這一目的所采取的技術措施。原氣的溫度在100—103℃,高壓氣的溫度在120℃是將原料放入密閉容器中,利用高壓氣迅速將熱量傳遞,使原料快速成熟加工方法。
  類菜餚按技法分:清,粉,扣,包,糟,花色,果盅
  1清:是指單一原料單一口味(鹹鮮味)原料直接調味製,成品湯清味鮮質地嫩的方法,原料必須清洗幹淨,瀝淨血水。
  工藝流程:選料→切配→腌漬預製→製→出鍋。
  代表菜:清武昌魚、清鰣魚
  2粉,是指加工,腌味的原料上漿後,粘上一層熟玉粉製成菜的方法,粉的菜餚具有糯軟香濃,味醇適口的特點。工藝流程:選料→切配→腌漬→拌生粉→製→裝盤。
  代表菜:荷葉粉肉,、粉鱔魚
  3包:是將用不同的調料腌製入味烹調原料,用網油葉,荷葉,竹葉,芭蕉葉等包裹後,放入器皿中,用汽加熱至熟的方法,此法保持原料的原汁原味不受損失,又可增加包裹材料的風味
  4、糟:是在菜的調料中加糟鹵或糟油使成品菜有特殊的糟香味的法。糟菜餚的加熱時間都不長否則糟鹵就會發酸。
  5、上漿:是鮮嫩原料用蛋清澱粉上漿後再的方法。上漿可使原料汁液少受損失,同時增加滑嫩感。
  6、果盅:是將水果加成盅,將原料初加工,放入果盅內,上籠熟的方法,果盅選擇多以西瓜、橙子、雪梨、木瓜、桔瓜為主,去掉原料果心。
  7、扣:就是將原料經過改刀處理按一定順序復入碗中,上籠熟的方法,熟菜餚翻扣裝盤形體飽滿,神形生動。
  8、花色:又稱為釀,是將加工成型的原料裝入容器內,入屜上籠用中小火較短時間加熱(根據不同性質的原料作相應調整)成熟後澆淋芡汁成菜的技法。這種技法是利用中小火勢和柔緩氣加熱使菜餚不走樣、不變形,保持析來美觀的造型,是法中最精細的一種。
