擦仡斗
精粉500克,水250克。
把面倒入盆里,加入水(水温:冬热,夏春秋温)搅匀,抟成面团即可(不能多揉),然后将扁眼“擦子”横架于锅沿上,左手按住擦子一头,右手握一块面,放在擦子上向前方一下一下地推擦,使面擦漏在开水锅里,煮熟即成。
曲花短条,易嚼,好消化,筋韧利口。
【注】此面晋中地区常食,吃时适当配各种荤素浇头。“擦子”系在木框架中嵌有凸形铁片,片中布满椭圆形小孔的一种炊具。此面还宜配用高粱面、细玉米面、杂豆面进行擦制,味道和食感别具特色。
